The Game Boy, like any other system, had its fair share of bootleg games, and this page simply has a few that I've found interesting.
Fourtune Power Industries Game Boy clone.
This is the only known pirate GB clone, that is, is a game console which plays actual Game Boy cartridges, that is not made by Nintendo themselves. It is manufactured by Fortune Power Industries Co. Ltd. out of Taiwan; they also make a NES and Genesis/MegaDrive as well. They also claim they make "Game Boy Compatible software", whether or not it is 'legit' is anyone's guess. I don't know if this is, strictly speaking, a "pirate" clone, since there is no propriatary parts inside the Game Boy, and therefore anyone can could build one with off-the-shelf parts. I don't see why anyone would think there is a market for this 'old style' GB with the slimmer, more compact Pocket GBs out there, to say nothing of the new Color GB, but who knows :) Whether or not this is *really* 100% Game Boy compatible, including compatibility with all accessories (especially those using the Game Link) is questionable.

Mulit-Game Pirated Carts
These are bootleg carts that quite simply are classified by having more than one game on them. I bought two on eBay a while back, below is some info on them, as well as a couple others i don't own.
Bootleg Side-by-side Commparison
My two carts side-by-side. On the far right is a normal GB cart. Differences include "Nintendo Game Boy" replaced with the word, "GAME", No gray bars on the sides of the pirated carts, and they have thinner cut lines on the back, as well as no "Made in Japan" indication on the back.
All Color 15 in 1
This is my pride and joy, All Color 15 in 1. With 15 games on it, I only need this for retro gaming on the go. Includes Japan-Only GB games! It is actually a GBC cart that can play in any GB. A great color palette is added to GB games on the cart, and the palette was nicely chosen as it looks great on most of the games.

2000 Super Gameboy 32 in 1 Super
This is your average bootleg. Claims to have 29 more games than it really does. It has 3 games that have been thrown into a list of 32, meaning that there may be multiple game titles on the menu, but they are just the same 3 games.

Super 4-in-1
This is one I don't own, but this is a good example of a cart with a button to change games. It switches between Flappy Special, Dr. Mario, and two other unknown games. Once the button is pressed, the Gameboy is rebooted with the next game in the cart booting up.
Single Game Pirated Carts
These games are a bit different from Multi-carts as they usually are sprite hacks of other games, or are official games rebranded in a cheap casing and/or a fake label.
Sonic 6
Sonic 6 is a sprite hack of Speedy Gonzales where Sonic replaces Speedy. Oddly enough, the SNES version of Speedy Gonzales also had a sprite hack where Speedy was replaced with Sonic, and it's called Sonic the Hedgehog 4. It's unknown if the 2 are in any relation to each other, but the SNES hack was made by Hummer Team, a company who made a lot of bootlegs back in the day.
